Approximately 25% of the environmental impact of the global food system is attributed to so called ‘avoidable’ food losses and waste. Valorising industrial side streams and reducing food waste present major opportunities to mitigate these impacts. With the action plan against food waste, the Swiss Federal Council aims to halve avoidable food losses by 2030. Life Cycle Assessment (LCA) plays a critical role in evaluating the environmental performance of different strategies for side stream valorisation.
